Recipe: Ricotta Toast with Honey & Sage

When it comes to a quite breakfast, there’s almost nothing I like more than toast! It’s fast, it’s easy, it’s filling and most importantly, ever-changeable with the toppings! This is Ricotta Toast with fresh sage, honey and pickled onions (quick pickled in equal parts of water + red wine vinegar, with salt and pepper) on Sourdough is so simple but if you take the extra moment, it can look like art! 

Ingredients

Ricotta

Sourdough Toast

fresh sage,

honey and

Pickled onions (see below how to make)

Honey

Salt and Pepper

Method

  1. Quick pickle slices of onions in the fridge in equal parts of water + red wine vinegar, with salt and pepper.

  2. Toast a thick slice of sourdough bread.

  3. Let ricotta get to room temperature and spread a medium-thick layer.

  4. Top with leaves of sage, pickled onions in a uniform line, drizzles of honey, and sea salt & pepper.
