Easy, homemade Roasted Garlic Hummus! Check out the post on @tofoodies.
Ingredients: 1 can of chickpeas, drained and rinsed (400ml) 6 cloves of garlic (or more if you really like garlic) 1/2 cup of Olive oil, divided in half 2 tablespoons of tahini Juice of 1 lemon Paprika or zaatar for garnish
Method: 1. Put your garlic cloves in an oven safe ramekin and cover the cloves with 1/4 cup of olive oil. Place in the oven at 400 until golden brown, about 20 minutes, stirring once or twice. Set aside.
2. In a blender, blend chickpeas with tahini, 1/2 cup of regular olive oil, your 1/2 cup of garlic infused olive oil with 4+ of the roasted garlic gloves (setting aside a couple for garnish). It should blend until thick but creamy, but if it's still feeling like a paste, just add more olive oil.
3. Taste, and add salt as needed.
4. Serve by plating in a bowl, and use a spoon to create a crater in the middle. Drizzle with good olive oil, sprinkle a little paprika or zaatar, put a couple roasted garlic cloves on top and serve with your favourite dipping item! (veggies, pita, you name it)
